Ingredients

  • 2 15 cm (6") flour tortillas 
  • 2 slices bacon 
  • 2 eggs  
  • 30 mL (2 Tbsp) milk 
  • 15 mL (1 Tbsp) butter  
  • 125 mL (½ cup) shredded cheese 
  • Salsa, to taste 
  • Sour cream, to taste 

Directions

  1. Heat oven to 95 °C (200 °F). Wrap tortillas in foil and place in oven.  
  2. Heat a small frying pan on medium heat. Chop the bacon and put it in the pan. Fry until cooked but not too crisp. Remove from pan and place in a small bowl or on a plate. Drain any accumulated fat from the pan. 
  3. Crack the eggs into a medium bowl. Add the milk. 
  4. Using a whisk or fork, combine the eggs and milk, whisking quickly to get some air into the eggs. 
  5. Place the butter in the frying pan over medium heat. When the butter is melted, add the egg mixture.  
  6. Using a wooden spoon or heatproof spatula, gently stir the eggs every few seconds to scramble them. When the eggs are starting to firm up, add half the cheese and mix it in. Cook until the eggs are bright yellow, fluffy, and not runny at all and the cheese is melted.  
  7. Carefully remove the pan from the heat. Stir the cooked bacon into the eggs. 
  8. Remove the warm tortillas from the oven using oven mitts.  
  9. Spoon half of the egg mixture into the centre of each tortilla. Sprinkle remaining cheese on top. Add a spoonful of salsa and sour cream, if desired. Roll up the tortilla.
